Happy Birthday Pumpkin Card

Hi friends, we've had some beautiful Fall weather here.  Definitely makes me think of pumpkins.....and all my yummy recipes to make with pumpkin.

Today I have a pretty birthday card that I made for my mother in law for next month.  I'm really into this rustic pumpkin color and love to combine it with green.

The stamps used are Vintage Picnic, using some paper piecing on the picnic basket.  The plump little pumpkins were colored with Copic markers.  When doing a focal piece like this, I stamp the pumpkins....then color them with my handy dandy Copics.....and then adhere the paper pieced basket over the top.  My base cardstock is Terracotta Tile.

I always love to use my scrap papers to embellish the inside of the card.

And here are the Copic colors I used to color in the pumpkin image.  Hope you enjoy!  It's the perfect time to use those Fall themed stamps.

Love this card, but I love everything you do! I never thought about using paper scraps inside. I have saved bunches of scraps, so I will start doing that!

I love your blog and etsy store! Your creativity and imagination are boundless and so inspiring. One of my favorite pumpkin tools is the Nestibilities pumpkin. I've made lots of things with them and they've all turned out so cute.

Pumpkin Dip:

Ingredients

3/4 cup (6 ounces) 1/3-less-fat cream cheese
1/2 cup packed brown sugar
1/2 cup canned pumpkin
2 teaspoons maple syrup
1/2 teaspoon ground cinnamon
24 apple slices

Preparation

Place first 3 ingredients in a medium bowl, and beat with a mixer at medium speed until well blended. Add syrup and cinnamon, and beat until smooth. Cover and chill 30 minutes. Serve with apple.

Glad to see a card with your Vintage Picnic set...it is my most favorite set ever! I love making cards with it, and am so glad you designed it. Now I have a new layout to try with it :)

Don't have any pumpkin recipes, but I'm on the hunt for a pumpkin cake with a delicious cream cheese frosting...with maybe a streuselly topping somewhere in it...

This card has really got me thinking about fall. We in Missouri, are not experiencing fall quite yet, but it will be soon. Thanks for showing the copics you used. I am going to try it with the same colors. Love your style.

Hi Mish, I have this yummy pumpkin recipe that I make here in New Zealand. We're going into spring now, but we've enjoyed this dish over the last few months when pumpkins were in abundance.

PUMPKIN BAKE

1kg pumpkin
1 tablespoon butter
¼ cup grated cheese
2 tablespoons sour cream
salt & pepper, and any other seasonings you like
2 tablespoons self-raising flour
2 eggs
1 tomato
grated cheese for the topping

Peel and cut pumpkin into chunks and boil for 20 minutes or until tender. Drain. Add butter and
mash well. Stir in ¼ cup of grated cheese, sour cream and seasonings. Add flour and eggs.
Spread evenly into a casserole dish. Arrange tomato slices on top and sprinkle with grated
cheese. Bake at 350F for 30 minutes.

PUMPKIN BARS

4 EGGS
2 CUPS SUGAR
1 CUP OIL
ONE 16 OZ. CAN PUMPKIN
2 CUPS FLOUR
2 TSP. BAKING POWDER
2 TSP. CINNAMON
1 TSP. BAKING SODA
1/2 TSP. SALT


Beat together the first four ingredients (eggs, sugar, oil & pumpkin).

Stir together flour, baking powder, cinnamon, baking soda, salt, and add to pumpkin mixture, and mix.

Spread batter in ungreased 15x10x1” pan. Bake at 350 degrees for 25 to 30 minutes (I bake for 25 and then check it with a toothpick in the center, if not done bake a little longer.)

Frosting

3 oz. pkg. cream cheese, softened to room temperature
6 tablespoons butter, softened
1 tablespoon milk
1 tsp. vanilla
1 tsp. almond extract
1 3/4 cup powdered sugar
Cream together until smooth and frost bars when they have cooled.
