Want a simple supper menu? We sit down and eat supper every single night. It's our family time to talk about our days. Not in front of the tv. Not on paper plates. Real cloth napkins. No cell phones allowed. Dishes are done afterwards.
I love home cooked meals instead of stuff out of a box.....and fast food is usually not an option for us since we live in the country. But there are times when it's hard to fit in a nice, home cooked meal when the girls are at practices and sporting events.
Here's a great go to meal that is quick, easy and oh so good. Even my beef lovin' husband likes this one. Chicken Sandwiches with Slaw Topping/BBQ Baked Beans
Remove skin and bones from store bought deli roasted chicken. Shred meat into bowl. Mix 1 package of coleslaw mix with about half a jar of coleslaw dressing. Serve chicken on hamburger buns. Top with slaw mix and BBQ sauce. Serve with BBQ Baked Beans. For my beans, I mix 1 can of Bush's Grillin' Beans (whatever flavor you like), 1 can Pork & Beans, 1 can red beans along with a dollop of yellow mustard and more bottled BBQ sauce. Heat in microwave or on stove.
This meal is easy to prepare ahead of time and reheats well for leftovers. Shredded pork would also be good.

Great idea! YUM! We don't often eat out either, and most meals here are also from scratch; very little in the pre-prepared part (ie. frozen meals from the store). And yes, I DO work; I am a teacher and teach 3-4 days a week...I have learned fast to prepare recipes and can have dinner on the table in an hour or less...:0)

These dishes made me laugh!!! I bought this whole set of Corel in the (swiping hand over mouth so you can't hear) in the 70s for my "hope" chest. So funny that what I was "hoping" for never happened but I wouldn't change a thing!!!
I also have those dishes from the exact same time period! Guess that dates us doesn't it? The dinner sounds great. Love the coleslaw idea.
I also require we all sit down to dinner together...no matter what. That's why most nights, we eat dinner at 8:30pm! It's a great thing and something I *know* our kids appreciate and will remember fondly! I am not entirely sure what I'd do without my crockpot...we don't use prepared foods here either! (Tonight, it's chicken soup with what's left of the chicken I roasted Friday night!)
Loved the recipe. I too require the family to sit at the table and eat dinner together every night. I work part time and run five children all over the county morning and afternoon. BUT, I finally found a great solution for our family. I plan my menu by the week, brown the hamburger and or saute the chicken and divide for each dish I will be serving, add the rest of the indgredients and put in the fridge to serve according to the schedule. My food bill has been reduced by more than half and I never worry about what is for dinner. I serve left overs on Saturday and we will usually allow ourselves one meal out on the weekends... especially since my food bill drastically was reduced..... Thanks for sharing your recipe and would love more ideas! I get tired of what I serve and I am always looking for something new.

Sounds delish..thanks for sharing..must do the chicken. I often use deli chicken...it is good with sauteed peppers and onions, over cooked rice topped with some cheese...like a Philly Chicken Cheese sandwich only a rice bowl instead. I put the bone, skinned chicken pieces in near the end of cooking the peppers and onions to get it hot.
I like to use the deli chicken in a Moroccan chicken salad...chicken, apples, raisins, cashews, onions, celery, dressed with mayo, a bit of Miracle Whip with some yellow curry powder to taste. Nice with crackers.
I once had a matching piece to your set that I didn't see in the pic. Yes, it was a wedding present back in 1975. I love the vintage pieces you pick up and show in your pics. Totally enjoy your blog, Mish.

I'd eat that...but my husband wouldn't eat the darn colesalaw....he is meat and potatoes -- nothing foo-foo -- so pass along those kind of easy and yummy recipes! :)
